Think your food labels are complete and honest, even if you can’t pronounce 3/4 of the ingredients?  Think again.  GMOs (genetically modified organisms) developed by Monsanto and proven to cause cancer and other DNA alterations are not required by the FDA to be labeled.

This video does a great job to illustrate the point.  Just don’t let the issue drop there.  After going here to tell Pres. Obama to cut all ties between the FDA and Monsanto, take another moment to write your representatives from the bottom up.  Let them know that not only are you fed up with Monsanto contaminating and controlling our food supply, but that as a human being you have a right to know what is in your food.  It is about time the US caught up with the rest of the world on this matter.

Quality not quantity counts – even with fruits & vegetables

1st I want you to consider a few truths regarding the FDA guidelines or RDA [recommended dietary allowance] of vitamins, minerals, and food group portions demonstrated by the colorful My Food Plate and its predecessor the Food Pyramid.  While the plate does give fruits and vegetables a more prominent division of our diet than grains, it still gives grains a 25% allocation to your meals.  The Food Pyramid had recommended a gargantuan 9-11 servings of carbohydrates in a single day.

Food industry monopolist Monsanto has had their hand in the FDA for a long time.  Grains are cheap to produce & are added to foods like meat that we’d never consider to examine.  They also cause cows to develop e-coli.  Monsanto has “poisoned the water hole” so to speak by putting cancerous chemicals in our food supply, sued family farmers when their own Frankenstein seed contaminated the farmers’ seed, bankrupted many by keeping them in legal limbo, & even caused 1000s of Indian farmers to commit suicide by drinking pesticides.  [click here to tell Pres. Before my days of behind the scenes nutritional research, back when my kids were toddlers, I would lament how in the world could I fit ~10 healthy carbohydrates a day in & still provide a rich diet of fruits and vegetables.  It became clear quickly that it was an either/or situation.  While I tried to offer a fruit at each breakfast, then at least 1 if not 2 veggies at lunch, 2-3 vegetables at dinner, cushioned with at least 1 fruit snack throughout the day, affordability often gave way to dependence on grains.  At least I did use oatmeal as our mainstay rather than pre-packaged cookies and cakes.  Now if I can just track down organic oatmeal…

When it came to my selection of fruits I relied on unsweetened applesauce, oranges, bananas, and canned varieties.  Wow, have I come a long way, baby.  Out of my choices at least half of them were just plain sorry.  I will give bananas a bit of credit since the 1g of fat in each does help provide their developing brains and nervous system with the fatty protective myelin sheath that insulates nerves.  While it is famous for potassium, it turns out to be an inferior source compared to raw potatoes, cantaloupe, strawberries, and even raw cacao beans (or dark chocolate if cacao is inaccessible to you).

Oranges were a great source (but are also a choking hazard, so beware – helps to peel the inner white linings off to reveal the raw pulp), but the canned applesauce reported zero nutrients.  FRESH raw apples – including chewing the seeds extra well – are, however, superb choices.  Canned fruit (pineapples, peaches, fruit cocktail) is loaded in corn syrup.

Corn syrup (and corn oil) has been linked as a direct cause of diabetes, obesity, and soaring triglyceride fat levels, and cancer.  Quite simply it is so concentrated that it overloads the pancreas in 1 form & chokes out cell walls in the other.  Our family has come to refer to it as “diabetic juice”  and “cancer Kool-aid.”

Which brings to mind another fact:  raw fruits are better sources than juice for the simple reason that juice contains an overabundance of servings, is not fresh unless juiced yourself, and is pasteurized.  On the flip side, freshly juicing vegetables is the most fantastic way to get your quota in without sore jaws and bloat.  The fact that industrial farms have depleted our soils with pesticide and chemical fertilizer use, as well as picking produce green & shipping it cross-country or world-wide means what you’re eating isn’t as nutritious as it could be.  There is no source more superior than locally grown organic foods.

The following video shows why you should be choosing fruits and vegetables with HIGH antioxidant values.  They reduce inflammation which will help clear your skin, fight disease, and heal worn out cells.  Doing so prevents a milieu of life threatening conditions.


Classical education: the Trivium, logic stage, 5-8 grade

Trivium —  3 stages of classical learning method including grammar (memorization of facts in all subjects), logic (explaining the why’s and how’s of a subject), and rhetoric (supporting ideas with facts and communicating them effectively).  Each stage maximizes the brain capacity and psychological stages of development in different childhood periods.


Everyone warns you about the terrible 2’s & puts the fear of God in you wondering what they’ll be up to as teenagers, but the logical stage is overlooked and understated in every parenting book I have read from psychological texts to Dr. Sears‘ attachment parenting philosophies.  Until now.  Having come across the invaluable source “The Well Trained Mind” by Susan Wise Bauer and Jennie Wise, they reference Dorothy Sayers‘ book “The Lost Tools of Learning” throughout, and this is what Ms. Sayers has to say about ages 10-13:

The Pert age…is characterized by contradicting, answering back, liking to “catch people out” (especially one’s elders); and by the propounding of conundrums.  Its nuisance-value is extremely high.


Both of my sons (ok, and yes, myself) had what amounts to rebellious meltdowns in our studies that crept up at age 10 & was flaming full force by age 11.  All 3 of us were bright, curious individuals with loads of potential, but quite frankly had learned so much that we had gotten a little big for our britches, and “just because” or “because I said so” wasn’t gonna cut it anymore.  Nor would learning that which dulled our senses beyond belief, because of course our imaginations alone were rich enough to sustain us.  I am sure that for 1 reason or another, bookworm or not, by age 11 almost every child begins to think they are miniature adults and therefore sufficient authority to decide everything for themselves.  Ha!  If they only knew….but that’s where we as parents come in, right?


  • step 1)  Breathe.  This, too, shall pass.
  • step 2)  Consistency is key.
  • step 3)  Then again, so is flexibility.  *agggh*, I know.  But it’s true.  Just know when to hold ’em, know when to fold ’em, know when to walk away, know when to run.  Kenny Rogers, folks…a mantra that will get you through many a trial & error.


Instead of focusing on the negative, focus of the positive side of your child’s newly developed discernment.  Like I mentioned before, it is truly ok if they learn more than you know about something.  Do not create ceilings for them just out of your own pride’s sake.  Instead take advantage of their knowledge by using it in your own life.  My oldest son became the family’s official tech guy around that age, and both kids enjoy cooking supervised meals.


Also do not let the disrespect slide.  They like to call you out?  Then calling them out will be equally effective — even more so in the presence of company.  I know, I’m cruel.  Hey, when your 10 year old disappears for 30 min. in a community center when you expected him to just go to the restroom, embarrassment can be your friend once you recover and realize he has not been kidnapped, afterall.


During this stage, your child should be fluent enough in reading, writing, and arithmetic to apply these tools into solving complex problems.  They should actually be able to evaluate the problem and figure out 1) what steps/tools/skills it takes to solve it and then 2) finish the task.  By nature, they should be doing more independent work and developing the skill to ask for help appropriately while also not relying on others too much.  Like everything, it is a delicate balance.


10 minutes of parental tutoring

for every 1 hour of independent study is typical.

Some subjects will involve more in-depth conversation (or lecture for those who’re really old school), but these are usually philosophical discussions that reach across every subject line.  Such as nutrition – involves math (weight, measurement, caloric needs, vitamin and mineral content and intake),  social studies (sustainable organic farming and local farmers’ market support v.s. mass-produced factory farms churning out GMO‘s at your Wal-Mart grocery), science (effects of organic nutrition v.s. pesticide &/or genetically modified products on the human immune system).  The reading, vocabulary, spelling, and grammar by example should be ample in articles, videos, etc…used as sources.


Which brings to mind something very important:  your source is crucial.  There is none more superior than a primary source.  (That’d be the “horse’s mouth,” so to speak.)  Secondary sources are acceptable as long as you do your best to know the motivation of who published it.  Are they sponsored?  By whom?  A front for propaganda agendas?  Literally being able to pick and choose the good from the slime of media sources is absolutely crucial, particularly in the digital age of immediate gratification and instant publication.


A big key to maintaining interest in subjects that you pick for child during the logic stage is to find some way, any way, for them to relate that topic to themselves.  Telling my current 11 year old to eat more is not enough.  Reiterating that his muscles must have protein to build, otherwise they waste away, makes him understand clearly that he cannot put off a good diet if he intends to hold on to those biceps he’s so proud of.

The 1st business of the day on my priority plate was to track the progress of this freedom stifling piece of legislation:  SB 31 titled to “Clarify Penalties for Unauthorized Practice of Medicine.”   Let’s quickly get down to business so that you too, can spread the word — FAST.

We all know how bills, acts, campaign slogans, and government agencies often title themselves in a confusing manner – almost as if it were meant to intentionally mislead.  So, let’s start there.  

1)  NC refuses to license alternative health care practitioners.  Since bill SB 31 also applies to out-of-state licensed holistic healers, then that also means they cannot perform their specialty within the state of NC without suffering the same penalties. 

2)  What’s the penalty?  FELON.   Yes, they actually seek to increase the penalty from a misdemeanor (which is still a violation of civil rights and natural law) to FELONY status.  That means:  no more voting rights, forget applying for a job (if you can find one outside of allopathic drug based healthcare, military, banking to begin with in this state), total disqualification for ANY government employment from park maintenance to secretarial, postal, or education…I think you understand the gravity of this criminal status.

3)  Even though Asheville, NC is 1 of the most popular and renowned cities in our entire continent, as well as the most progressive towards green, eco-friendly, organic lifestyle and health modalities – therefore provides plenty of proof of efficiency and safety in their own geographical corner of the state – SB 31 still has not been shutdown entirely.

4)  Holistic medicine encompasses a wide range of specialties from nutrition, herbs, acupuncture, to energy work like chakra therapy or reflexology, and includes Chinese Medicine practitioners.  Every single faction of alternative health is nothing new, experimental, or drug dependent.  On the contrary…it in fact is based on natural law (quite simply:  how natural substances relate to each other), and comes from a vast world of knowledge that has been known since the beginning of time, tried and tested throughout the ages by Asian and Native American cultures, yet may just be coming to light in your neck of the woods thanks to the Internet allowing us to share and store infinite amounts of this knowledge.

What has been happening in the medicine field in our country is akin to the strangling cultural breakdown of Native Americans once they were 1st forced from their homes and then later beaten for even speaking their native language or practicing their own traditions as children were seized from their families and forced into government boarding schools.  Within 1 generation, eons of knowledge collected over the course of their history nearly disappeared entirely.  Even basic things like what was good to eat or how to connect spiritually to our Great Creator and each other as well nearly vanished from their mindset. 

NC is leading the country on none other than a witch hunt.  At a time when other states are recognizing the now scientifically proven benefits of natural medicine, they are regressing back into the Stone Age pockets of corporate greed.  They are afterall, 1 of the leading states in modern medicinal research containing 3 prominent med schools.

Which brings me to this little known fact about med schools.  Only 8 out of 128 med schools in the entire nation even offer nutrition.  Granted, there is more to alternative medicine than just nutrition, but the proper knowledge of vitamins, minerals, enzymes, fats, proteins, and carbohydrates is the very basis of life, health, and thus by extension – medicine.

Here is a personal example from my own life of how atrocious SB 31 is and the detrimental effects of passing it could have:

My husband broke both the ulna and radius of his left arm.  He went to an orthopedist who had practiced in NC for years.  Every 4-6 weeks for 8 months, he visited this orthopedist (bone specialist), receiving x-rays each time that sadly confirmed there was NO sign of healing or bone fusing whatsoever.  I began worrying that he was indeed diabetic. 

During this 8 months of orthopedic visits, he had to turn down 2 different high paying job offers as an electrician because they saw him as an immediate liability.  (He had been laid off >1yr when the break occurred.)

Having seen my chiropractor (the man was phenomenal) and learning that he bases his treatments on getting to the core of problems through nutrition v.s. relying on prescribing pain pills or muscle relaxers, I gained immense respect for him.  When I realized he was also an acupuncturist, I began thinking maybe he could help my husband. 

The acupuncture consultation was free.  Let me repeat:  FREE.  He viewed x-rays taken 2 weeks prior and immediately asked J, “Do you drink sodas?”  Again, my mind starts thinking, “Oh no, diabetes!”  My husband replied, “Maybe 1 or 2  20 ounce bottles a day is all.”  Our alternative healthcare provider’s instant response:  STOP NOW.  

I told him, “Sure, no problem, but you have my curiosity picked, so could you please explain why?”   The answer:  Phosphates keep your body from using calcium, so even if you take supplements, the calcium remains free floating in your bloodstream and isn’t able to be used to rebuild bone.  Sodas are full of phosphates due to phosphoric acid as an ingredient. 

Guess what?  My husband quit cold turkey and FOUR WEEKS later was 98% healed.  We were never charged a dime for that visit, yet we owe the incompetent orthopedist for 2 surgeries, 8 months worth of visits, and an additional $2500 for an useless machine that he promised would cost only $800-$1000 and would be returnable.  The machine – even though for external use only – is non-returnable. 

Back to business though:  Time to GET ON THE HORN and let NC state representatives know that what they are doing steps on your freedom, blackmails your life by holding your wallet and mortgage for ransom, and creates criminals out of truly good Samaritans who in fact do know what they are talking about and who also seek to empower the “patient” – not create a dependency on any system, much less any chemical artificial substance proven to ruin health and destroy lives.

Think I’m going overboard by saying the modern Western medicine practices hold your life or mortgage at ransom?  How about considering we are THE ONLY developed nation in the world where foreclosures are soaring in large part due to unpaid medical costs.

Vegetarian Cheese made with GMO Calf Rennin/Rennet

 editor’s note:  Rennin, rennet, chymosin are all names used for the same thing > an enzyme that is added to milk as the first step in making cheese, or for making junket.   Sometimes, the terminology is more distinct, rennet being the stomach extract, while rennin or chymosin are names for the pure enzyme itself, which is the active ingredient in the extract. – WordIQ.

In 1990 a genetically modified organism [GMO] rennin substitute was passed by the FDA.  In the USA and UK near 90% of cheese is produced using the GMO rennin!  It has been the best kept secret ever!  Tesco and Marks & Spencer [aka, M&S] grocery stores repeatedly assured me that no GMO was used in their cheese production.  I did not believe them, and I kept at them and at them until they told me the truth. 

I made this video to highlight my journey with Marks & Spencer trying to get the truth out of them.  All of their cheeses use the GMO rennin — their organic cheeses!


I suspect Tesco do as well, but they will not admit it.  I am currently trying to find out exactly which organic certification board thinks it is OK to use GMO rennin.
The Vegetarian Society also endorse the GMO rennin.  As the GMO rennin is cloned from the actual rennin extracted from a dead calves stomach, I asked did they not think they were deceiving vegetarians with their endorsement?  They said they ‘believe it better that one calf should die than thousands.’
I put it to them:  if they had not have endorsed it, then the cheese manufacturers would have been forced to use one of the natural plant rennins.

The FDA granted the original patent and license to Pfizer (the drug giant).
Any substance taken from a plant cannot be patented, no money in that, so the GMO rennin totally took over the market.  It was becoming too expensive to kill calves at a day old to harvest the rennin, so a substitute had to be found.

The substance in the rennin that causes the curds and whey to separate is chymosin.  They started off with rennin from a dead calves stomach, extracted the chymosin, then produced clones of the calves rennin.  They now also use rennin from piglets and lambs.

Tesco, environmental health, and Marks & Spencer all tell me no GMO is left in the cheese or whey, but they could not furnish me with studies or tests that might prove this.  Other advocates of this GMO chymosin say only a small percentage is left in the cheese, and more in the whey!  Whey is in everything:  chocolate, biscuits, ice cream, etc…

Asking a vegetarian to eat cheese produced from cloned rennin, is akin to saying, eat that sheep – its OK – its only a clone!!!!!!  I have not been onto all the other supermarket chains, but I think we can take it as a given….they all use it! 
The Co-Op [The Co-operative Group, LTD] seems to be the only supermarket in the UK who has shown any respect for their customers being the only ones that have it on the label that a GMO is used in the production of the cheese.  They have at least allowed their customers the choice if they want to consume food produced using a GMO.
MUCH respect to The Co-op!  I WILL NOW BE DOING A LOT MORE OF MY SHOPPING AT THE CO-OP BECAUSE OF THEIR HONESTY.  I won’t eat the GMO cheese, but AT LEAST The Co-op warns you…in BIG LETTERS!
The rest are lying, deceitful cons who have maintained this lie for years.  I dare anyone to ring Marks & Spencer or Tesco and ask if they use GMO in the production of their cheeses – they will say no!  It took me months to get the truth out of them, and I now have it in writing.  It suited them all just fine that the “useless eaters” had no clue what they were eating!
I beg you all, please spread the word on this, tell everyone, and start shouting.  Do what I do:  phone them, make a fuss, call them liars – because that is what they are!  Marks & Spencer especially bum and blow all the time about their store being totally GMO free!  Half the food in their food has had the GMO chymosin used in the production.  Rotten liars!
Then there is all the things that contain GMO whey:  chocolate, ice cream, pies, biscuits… this DNA altering mess is in everything!  Cadbury and Nestle both use a lot of whey in their chocolate.  It’s a bulking agent – it bulks the chocolate up AND it bulks you up!

Then this link details the totally inadequate testing that was done on chymosin which seems to have been done by Pfizer….like they could be trusted.  I have been trying to establish who exactly produces the GMO chymosin, but so far no luck!  Whatever the big secret is, no one will tell me.

In the Aftermath of Nuclear Disaster

Sometimes there comes a point when you have to stop researching and start implementing what you’ve learned. Time to digest the changes, absorb the situation, and re-evaluate your priorities.

After several successive days and nights of spending most of my time trying to give this website project a jumpstart, the destructive trifecta of earthquake(s), tsunami, and nuclear radiation leakage knocked me into a reality check of my own family’s ability to protect and sustain itself should those circumstances either be duplicated or contaminate our little homestead.

The next day, a younger 3rd cousin of mine lost his wife after she gave birth to their son. A tragedy of epic proportions that although I cannot comprehend the depth, am immediately awakened to the need to address the here and now.

So, I spent the majority of the weekend offline. There comes a point where the many bigger issues must be taken apart to reveal that which is most important at its core, that which is most urgent, most effective, further reaching in its quest for longevity.

As a parent, this most often begins with my children. Have I spent any quality time with them lately? Have I – at least once today – let go of my own reality in order to visit their immature realms? A child’s priorities will never be an adult’s, but I find this mutually therapeutic when taken in small, frequent doses.

As a spouse, I wonder…how do I know when I’m working enough or working too much? Without an income or time clock attached to the deed, it is more difficult to measure. Then came the reflection, “Have I shown my appreciation?” Again, it is easier to assume that we have, than that we haven’t. I figured either way it went, it’d be a poor assumption.

There were also other things to consider:

How will possible nuclear fallout affect my food supply?
Would I be better off to start my peas indoors? v.s. the original plan to sow them directly in the ground right away? I just had gotten landscaping garden rows ready along the base of my fence.

Need to start collecting drink containers to sterilize with boiling water & keep filled for at least 2 weeks worth of drinking water.

Need to quit putting off my mini-root cellar idea. This will allow me to store plenty of cabbage, carrots, onions, potatoes, squash. Would be wise to consider constructing an indoor entrance to this. We don’t have a basement already, but we could easily modify a small section of flooring for indoor access to decrease chances of radiation exposure.

Stock up on iodine/potassium iodide. In essence, an adult needs 130mcg a day to saturate the thyroid. This protects the thyroid only, but is essential to blocking radioactive iodides. There could be other radioactive particles involved as well.

Clay – particularly bentonite – can be used as a mud bath, skin wrap, food/drink additive – to help draw out radiation.

Baking soda – Besides being the safest, most effective teeth cleaning substance, it also works to neutralize radioactive isotopes. Recommended to having 50 lbs on hand for emergency situations. Reportedly, you can get that much for ~$35. I thought I was doing good with the 3-4 small boxes we have put back.

Seaweed – any way you can get it, and get it pretty often because it contains high amounts of potassium iodide in the purest form available: food. Can be found dried/powdered in capsule form or as a direct food additive, salty/crunchy dehydrated snacks, fresh in salads, pickled…

Probably a good idea to store the water currently caught in my rain barrels in our covered portable cistern, & not use any rain caught this month without 1st treating it with baking soda. This is not drinking water I am talking about, either, but used for our garden instead.

Stock up on vitamin C, but make an effort to grow small citrus trees indoors beginning with orange and lemon.  Reportedly my great-grandfather kept miniatures growing and producing fruit in his basement even though he lived well out of range from their tropical native climate. 

Need to give special attention to my already growing antioxidant mustard greens, rosemary, and aloe vera. All of these are very easy to grow in small spaces and offer heavy metal detox for the circulatory system.

Time to include oregano in my herb garden. Praised for antimicrobial action, essential oil of oregano extracted from the plant is a strong daily defender of the immune system.

So back to my cycle of priorities…as always, they come back ’round to my family. So for now, I’m gonna log off, be eclectic and work on starting my pea sprouts indoors to help save our food supply while teaching my kids self-sufficiency and showing my mate that I’m thankful by bringing a bit o’ my own to the table…even if money doesn’t exchange hands.

You’ve heard how everything happens for a reason?  My husband and I lamented over the loss of decking contracts last fall as we were anticipating that extra income to get us through the Christmas shopping season and winter power bill cost hikes.  Not to mention, it was the first time since our courtship that we were able to work together on the same job as a team.  Not only did I love gaining his respect with the chance for him to see my hard work ethic firsthand after 15 years of working in separate industries, but I truly relished the toiling physical labor and feeling of strength that I gained as I kept up with his construction work pace quite readily. 

This video reveals a case where a lady died after a sudden illness, and since the autopsy revealed toxic levels of arsenic in her body, her husband was arrested for attempted murder.  In an attempt to prove his innocence, a heavy metal screening was performed on him as well…to uncover astonishing levels of arsenic poisoning in his system.  Further investigations discovered that they had been carpenters and specialized in none other than decks made from pressure treated wood.

I remember as we would pick out the materials at the local hardware store being concerned about the slimy green powder that coated the pressure treated pine lumber.  I was almost as aggravated that store employees wouldn’t pick out the wood for you without choosing crooked, inferior pieces.  Although I washed my hands as we left the store, the exposure continued throughout the grueling 16 hour work days as we rushed to get the job completed on time.

Artificial Butter Flavoring Proven Hazardous

That’s right, artificial ingredients are killing people–particularly the by product diacetyl produced when artifically flavored popcorn is microwaved.  The fumes produced during the popping, as well as breathed in once the bag is opened, and even inhaled during chewing are making people sick.  Sick enough to cause death, with suspicious links to lung cancer as well. 

Put simply, the symptoms may be as “minor” as increased coughing, gagging, and phlegm production, or it can be as severe as an instant asthmatic attack.  Over time, particularly with daily consumption and exposure, it is proven to cause extensive damage of the lung tissues–constricting bronchiole airways, even obliterating them all together, along with hyperextension, bursting, and calcification of the airsacs themselves. 

The FDA has been notified in writing that states the needed proof from the needed specialists, yet continue to ignore the problem without even so much as warning the American people that there are issues with the products at hand that need further investigation. 

Don’t dispare–popcorn is still a healthy, whole grain, high fiber snack.  Like other preparation and canning practices, it is time for the sake of our healths to revert back to the old school methods.  Although convenience is addictive, the effects of aluminum canning, plastic bottling, steroid additions, pesticide laden produce, and artificial ingredients and preservatives are proven to be crippling killers. 

As difficult as it may be, I have full faith that our Appalachian heritages still thrive enough to pass the knowledge along in order to keep this generation of latent priorities and past passivity alive.  

To prepare popcorn on the stove:

  1. Buy the bagged kernels of popping corn.
  2. Turn stove burner on high heat.
  3. To save on fat & calories, eliminate butter during popping process.  Otherwise, for a large pot of popcorn, melt 2 tablespoons of butter along with enough popcorn kernels to cover the bottom of the pot.
  4. Cover pot with lid as contents begin to heat.
  5. When corn begins to pop, secure lid with both hands (don’t forget your potholders) as you begin sliding pot vigorously back and forth over the burner. 
  6. When popping stops, remove completely from heat.
  7. Beware of steam escaping as you remove lid.  Open away from your face to prevent burns. 
  8. Salt or sweeten with light sprinkle of sugar as desired.
